Recreating with Leftovers NRIS! Do you know?
It only takes imagination to infuse fresh life (and form) into leftover food. Three tasty, easy recipes to clear your refrigerator of yesterday's food.


Dal Dosas

Ingredients:

1 cup leftover dal
1/2 cup wheat flour, 
1/2 cup rice flour, 
1/2 cup chickpea flour
1-2 garlic flakes, finely chopped
2 green chilies
Oil for frying
Salt to taste
A pinch of turmeric & asafetida

Method:
Add all the ingredients with 1 tsp of oil and water to make dosa batter like consistency. 
Pour oil on pan and make dosas out of the batter.
Flip over after a while.
Serve with any chutney. 


Tadka Rice

Ingredients:
1 cup leftover rice
2 long thin sliced onions
2 Green chilies
2 tbsp urad dal
2 tbsp cumin & mustard seeds
1 tbsp coriander seeds
1 tbsp whole pepper corns
2 tbsp til
1 tbsp garam masala (optional)
2 tbsp oil
Cilantro
Salt as per taste
Curry Leaves

Method:
Heat oil in a pan. Add cumin, mustard seeds, urad dal, whole coriander, pepper corn, curry leaves. 
When it begins to crackle, add chopped green chilies, til, add chopped onions and sauté until golden brown. 
Add leftover rice, salt, garam masala powder. Mix well and garnish with cilantro before serving.

Chicken Salad

Ingredients:
Leftover Chicken (grilled or baked)
1 onion
Mayonnaise
Plain yogurt
A few walnuts

Method:
Mix cold leftover chicken with a finely chopped onion and stir in a half mayo, half plain yogurt dressing. Add a few walnuts. Chill for 30 minutes and serve with any dish.
