Sweet & Sour Chicken

Ingredients:
Batter:
2 pieces of chicken breast cut into cubes, one egg, 2 heaps of a tablespoon of corn flour, pinch of salt to taste and cooking oil for frying.

 Sauce:
5-6 table spoons vinegar (preferably dark vinegar) 
3 tablespoons of sugar
3 tablespoons of tomato sauce.
3/4th table spoon soybean sauce (Soya sauce)
1/2 teaspoon salt
1/2 teaspoon ajinomoto (optional)
1/4 teaspoon of ground pepper
1/4 teaspoon red chili powder 
Optional--- two cups of chicken stock
1 spring onion cut into rounds
Carrot & capsicum cut into cubes
1 cucumber cut into flat pieces
1 table spoon cooking oil
A few drops of red color (optional)
Water as required
1 tablespoon Worstershire Sauce

Method:
Frying: Make a batter of eggs, corn flour, salt & ajinomoto, and a little water .Dip raw chicken cubes/pieces in the batter and let it remain for 1/2 an hour. Then shallow fry for 7 mins on each side. Remove fried pieces and keep them aside.
Mixing To Make Sauce: Make a mixture of sugar, tomato sauce, vinegar, soya sauce ajinomoto, ground pepper and Worstershire Sauce.
Heat this mixture, add spring onions, red chili powder, and fry them for a minute. Add chicken stock to this mixture. When it starts boiling, add carrot pieces, capsicum. Then add corn flour mixture made with water or chicken stock. Put fried chicken in the boiling mixture and let it cook for few minutes.
Garnish with spring onions and serve hot.


Manchurian Chicken

Ingredients: 
1 full chicken cut into small pieces
3 tablespoons of corn flour 
1 Egg
1 tablespoon of ground refined flour
3 tablespoon crushed garlic
4 green chilies
1 teaspoon of ajinomoto (optional).
Salt to taste
1 1/2 teaspoon of soy sauce
Water as required
1 spring onion cut into rounds
Carrot & capsicum cut into cubes
2 Red Onions cut long
5-6 table spoons vinegar (preferably dark vinegar)
1 tablespoon on Worstershire Sauce 

Method:
Mix corn flour, eggs and water to make a thick batter. Put in chicken pieces & mix well. Set aside for ˝ hour. Shallow fry in hot oil till chicken pieces are brown. Remove from the frying pan and keep aside.
Sauté the onions till dark brown. Chop garlic & green chilies into fine pieces, and sauté with the onions., Add Ajinomoto, salt to taste, soy sauce, and Worstershire sauce . Let it boil for 5 mins. Then add the fried chicken pieces. Cook for another 3-4 mins. 
Your Manchurian Chicken is ready to be served.

Chili Chicken

Ingredients: 
1 full chicken cut into small pieces, marinated with juice of 1 whole lemon.
1 tablespoon of soy sauce
Small piece of ginger cut/ crushed into paste 
Salt to taste
1 Capsicum cut into cubes
Pinch of red chili powder
4 green chilies slit length wise
1 tablespoon corn flour
4/5 tablespoons of frying oil
Pinch of ajinomoto (optional)
Method:
Heat oil in a pan and fry the marinated chicken pieces mixed with corn flour. Keep aside. Now fry green chilies and capsicum. Add corn flour & chicken stock , ginger, soy sauce, ajinomoto, red chili powder & salt to taste. Let it cook for 5 mins. Then add the chicken pieces and cook the mixture for another 4 mins.
Your Chili Chicken is ready to be served hot!
