Jalapeno Poppers
Ingredients:
1 (8 ounce) package cream cheese, softened
1 (8 ounce) package shredded sharp Cheddar cheese
1/4 cup mayonnaise
15 fresh jalapeno peppers, halved lengthwise and seeded
2 eggs, beaten
1/2 tablespoon milk
1 1/2 cups crushed corn flake cereal
Method:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet. In a medium bowl, mix together cream cheese, sharp Cheddar cheese and mayonnaise. Stuff jalapeno halves with the mixture. Whisk together eggs and milk in a small bowl. Place crushed corn flake cereal in a separate small bowl. Dip each stuffed jalapeno half into the egg and milk mixture, then roll in corn flake cereal to coat. Arrange in a single layer on the prepared baking sheet. Bake in the preheated oven 30 minutes, or until filling is bubbly and lightly browned.
Hot Cheese Puffs
Ingredients:
1/4 cup soft butter
1/2 lb. grated sharp cheddar cheese
1 cup all-purpose flour
Pinch of cayenne pepper
Method:
Mix all ingredients well and chill for two hours. Roll into small balls and place on an ungreased cookie sheet,
flattening slightly. Bake at 400º for 5 minutes.
Broccoli & Cheddar Quiche
Ingredients:
1 9-inch pie shell
1 (10 oz) package frozen chopped broccoli, about 1 1/2 cups
8 ounces fresh mushrooms, thinly sliced
1 cup milk
3 eggs, beaten
2 tablespoons margarine, melted
1 tablespoon flour
1 teaspoon salt
1/2 to 1 tsp pepper
1 cup shredded cheddar cheese, divided
Method:
Preheat oven to 375 degrees. Bake pie crust about 10 minutes or until bottom is slightly brown. Let cool. Cook
broccoli until tender; drain well. Combine milk, eggs, margarine, flour, salt, pepper and 3/4 cup cheese; whisk
until well blended. Sprinkle remaining 1/4 cup of cheese over crust. Layer broccoli and mushrooms on cheese.
Pour milk and egg mixture over all. Bake at 375° for 35 to 45 minutes or until a knife inserted in center
comes out clean.
Shortbread with Dates
Ingredients:
1 1/2 cups of butter or margarine
1 1/2 cups olive oil
1 1/2 cups of water
2 tsp vanilla
Flour
1 1/2 cups of dates
1-2 tsp cinnamon
1-2 tsp ground cloves
Icing sugar for dusting
Method:
Chop dates finely, warm in the oven, mix with a little olive oil in a bowl until combined, add cinnamon and
cloves. In a bowl mix butter, remaining olive oil, water and vanilla. Add sifted flour until you have a soft
dough. Roll the dough out and cut into strips. Spread each strip with date mixture. Roll each strip lengthwise
and firmly join the edge. Cut the roll into 7 cm pieces. Place on a baking tray and bake in a moderate oven
until lightly golden brown. Dust with icing sugar.
