Macaroni And Cheese

4 cups water
2 cups macaroni or penne
½ teaspoon salt

3 cups milk
1 teaspoon all purpose flour
2 cups grated mild cheddar cheese
½ teaspoon crushed fresh black pepper
1 teaspoon Tabasco sauce (optional)

Preheat oven to 350 degrees.

Boil water in three-quart saucepan. Add macaroni and salt. Cook for five minutes or until macaroni becomes little soft. Drain macaroni in to a colander. Return macaroni back to the saucepan. Pour three cups of milk and cook for five minutes mixing continuously. Turn off the heat. Add flour, half cup of cheese, and black pepper. Mix until cheese melts. Add little more milk if the macaroni looks dry. 
Transfer macaroni in to a greased three-quart casserole dish. Spread rest of the cheese on top of macaroni. Sprinkle few drops of Tabasco sauce (if using) on top of the cheese. Put the macaroni in to the oven and bake for fifteen minutes or until cheese becomes light brown.
Eat with salad, and some pickle or chutney.

Macaroni and cheese, and Tabasco sauce were my survival dishes in 1960s.

I made macaroni and cheese when our friend’s daughter came to visit us. She watched me make it and at the end she said aunty you go through all this trouble to make this, my mother opens a box and makes it in few minutes. After eating this macaroni and cheese I don’t think I can eat the box kind any more. 


Baked Almonds With Honey

2 cups almonds
3 tablespoons sugar
¼ teaspoon salt
3 tablespoons honey
1-teaspoon ghee (clarified butter) or vegetable oil
3-tablespoons water

Preheat the oven to 300 degrees. Spread almonds on a cookie sheet and bake for ten minutes mixing every three minutes. Remove from the oven and let them cool.

Mix sugar and salt in small bowl and set aside.

Mix honey, ghee and water in a 3-quart saucepan and boil it in medium heat for two minutes. Add almonds to the honey mixture while mixing until all the liquid is evaporated. Remove pan from the heat. 
Add sugar and salt to the almonds. Mix thoroughly and spread the almonds on a cookie sheet or piece of parchment paper.

Note: ¼ teaspoon red pepper will add good taste. (mix with sugar and salt )
