Jaggery Delicacies

Enjoy the flavors of Spring with two popular traditional jaggery based sweets.

Puran Poli (Holige)

Ingredients:

2 cups of pressure cooked chana dal 
2 cups of sugar 
1/4 cup of grated dry coconut 
2 cups of maida (flour)
1/2 cup of oil 
Water (approximately 1/4 cup) 
1/2 tsp of turmeric 

Method:
IStrain water from cooked chana dal. Mash dal thoroughly. Transfer the mashed stuff to a non-stick cooking pan and put it on a medium set stove. Add sugar and coconut and mix it well. Allow it to boil and thicken. Once it thickens, allow it to cool. Make small balls out of it. Meanwhile, make a poli dough by taking maida (all purpose flour), turmeric, and oil. Add water bit by bit until it forms into a soft dough. It should be soft and a bit oily. Heat the griddle on the stove top. Take a small ball size dough and roll it. Take puran ball and stuff it in the dough and seal it. Dust the dough with rice flour. Roll it out like chapati and place it on a pan. Pour 1 tsp of ghee onto it. Flip it over and allow it to cook thoroughly. While serving apply a tsp of ghee (optional).

Neyyappam Sweet Pancakes

Ingredients:
1 cup rice (cleaned washed & Soaked for 4 hours) 
1 cup jaggery 
1 tbsp coconut pieces 
1 white cardamom
Banana (Peeled - optional) 
10 pods cardamom (powdered) 
Ghee/oil (for frying) 

Method:
Grind rice, jaggery and banana to a very fine paste. Add cardamom powder and coconut pieces and mix well. Heat an appam griddle and put a 
large spoonful of ghee/oil in each dent. Pour batter. When cooked, turn over and cook on the other side.
