Four Ways To Say Cheese

Great as party starters, anytime snacks or as part of kids’ lunch menu. Delectable cheese delights from reader REENA BEKAL, our Gourmet Chef of the fortnight (August 16th). Congratulations Reena!


Cheese Rolls:

Ingredients:
200 gms grated cheese
1-cup fresh milk
2 onions finely chopped
½ cup chopped bell pepper
2-3 green chilies finely chopped 
1 tbsp chopped ginger
10 slices of bread 
Oil for frying

Method:
Mix cheese with milk; add onions, green chilies, ginger and salt. Mix well. Soak bread slices in water for a while. Roll them like a jam roll, stuffed with the cheese filling. Deep fry until golden brown. You may also bake the rolls after brushing them with butter for 10-12 minutes at 350 deg. Turn them over once midway so that they brown evenly.


Cheese Bake

Ingredients: 
½ cup grated cheese
½ cup chopped cabbage
2 boiled potatoes
½ cup chopped carrots
1 tbsp butter
1 egg
1 tsp lime juice
1 tbsp black pepper powder
1 cup chopped tomatoes
1 onion 
Salt to taste

Method:
Spread chopped cabbage, carrots, and mashed potatoes in an ovenproof dish. Set aside. Melt butter in a pan, add cheese, egg, salt, black pepper powder and lime juice. Spread this mixture over the veggie mix. Bake at 350 deg for 10 minutes. Decorate with onion and tomato rings.

Cheese Cocktail Snacks

Ingredients: 
1 cup grated cheese
3 boiled eggs
3 tbsp tomato sauce
11/2 tsp mayonnaise
1 tbsp chili sauce
1 tsp black pepper powder
2-3 green chilies 
Salt to taste

Method:
Slice boiled eggs into roundels. Set aside. Make a paste of green chilies. Add mayonnaise and salt. Spoon this mixture on each egg roundel.
In another bowl, mix chili sauce, tomato sauce. In a large baking tray, spread breadcrumbs. Place egg roundels on this bed. Pour sauce mixture on top and spread cheese over it. Bake 15 minutes at 350 deg.

Cheese Nests

Ingredients: 
150 gms grated cheese
½ cup vermicelli
3 chopped eggs
4 large potatoes
1 onion
2 bread slices, soaked in half-cup milk
1 tbsp mint leaves
1 tbsp chopped coriander leaves
2 green chilies
Salt and pepper to taste
Oil for frying
2 eggs beaten

Method:
Mix bread slices, cheese, mashed potatoes, salt and pepper. Separately, mix chopped hard boiled eggs, green chilies, mint leaves and coriander leaves. Flatten a little potato mixture and fill with egg mixture. Roll into a ball. Dip in beaten eggs and roll in vermicelli. Deep fry until golden brown. Cut into half before serving. Nests may be served with any sauce or ketchup.
